What is Marfa Meats?

 

Marfa Meats is a sustainable USDA meat processing facility with a whole animal approach that will be opening in the Spring of 2021. Our mission is to reconnect people with the source of their food. Born as the response to our founder’s investigation into why she couldn’t get a locally-raised steak in an area so rich in ranching culture, Marfa Meats is the solution to a longstanding problem in the meat industry in Far West Texas. Our company will prioritize respect for the animal, our producers, our employees and the community we feed to shorten the distance from ranch to plate, foster our customers’ sought after connection with the source of their food and enrich our community’s (as well as our own!) economic and physical health. We see Marfa Meats not only as an end in and of itself, but as a catalyst for other businesses that may result from our operations. 

 

Marfa Meats Services

 

  • We will operate as a USDA inspected processing facility for cattle, swine, lamb and goat and Custom Exempt wild game processor

  • Local and on-line retailer and wholesaler of locally and humanely raised and processed beef, pork, lamb and goat, as well as regionally harvested seafood

  • Online and in-person husbandry, cookery and butchery educator to reinforce the ranch to consumer connection and empower the consumer to use the whole animal

 

The Facility & its Future

 

Our facility is situated on a 6-acre parcel two miles west of Marfa which borders thousands of acres of ranch land.  We are installing a brand new Friesla built facility, with custom built modules for harvest, cut and pack, and the associated freezers and coolers. 

Once raw fabrication is underway, we will begin to dive into the development of a plethora of value added products, services and experiences. From more extensive sausage and dry aging programs, to a smokehouse and charcuterie production, as well as hide tanning and pet products and more, Marfa Meats has the potential to grow into a multi-faceted, enterprise stacked business with the driving force of a strong team and the support of our community. 

 

The Roles

 

  • Slaughter Manager* ($50-55k/year + plus benefits to start, 2+ years relevant industry experience required)

    • Marfa Meats is seeking an individual to fill the integral leadership role as the facility’s Slaughter Manager, to start in late April/early May of 2021. We are looking for a skilled, multi-species Slaughter(wo)man, or a Butcher with extensive slaughter experience. The facility will process beef, pork, lamb and goat. It is essential that the individual who fills this position shares our commitment to sustainable and humane slaughter practices and techniques. The ideal candidate is familiar with Temple Grandin’s philosophies around humane slaughter and animal handling, and must be able to comply with the Humane Slaughter Act to ensure animal welfare and meat quality. Gentle handling and proper care of the animals before slaughter are of the utmost importance, as well as an extensive knowledge of proper stunning and bleeding techniques, and all steps that take place thereafter in the slaughter process. This opportunity is ideal for an individual who is interested in growing and honing their skills in an environment that encourages our leaders to take ownership in the direction they help lead the company in. We are looking for an entrepreneurially minded individual who, beyond obtaining the tangible ability to handle and slaughter animals humanely, is willing to wear many hats, create and enforce structure and guide and train new team members. 

  • Production Manager* ($50-55k/year + plus benefits to start, 2+ years relevant industry experience required)

    • Marfa Meats is seeking an individual to fill the integral leadership role as the facility’s Production Manager, to start in late April/early May of 2021. We are looking for a skilled, multi-species Butcher with a background in “nose-to-tail” whole animal butchery, with experience ranging from whole carcass breakdown all the way to retail cuts. The facility will process beef, pork, lamb and goat as well as wild game. To start, Marfa Meats will focus solely on raw fabrication, but we fully expect to develop value-added programs down the line, such as a more extensive sausage program, dry aging, and a smokehouse, to name a few. This opportunity is ideal for a seasoned butcher who is interested in growing and honing their skills in an environment that encourages our leaders to take ownership in the direction they help lead the company in. We are looking for an entrepreneurially minded individual who, beyond obtaining the tangible ability to butcher, is willing and able to wear many hats, create and enforce structure and guide and train new team members. 

  • Slaughter Assistants* ($15-19/hr + benefits to start, relevant experience such as meat cutting, 4-H, professional knife skills, hunting, etc. required)

    • Marfa Meats is seeking individuals to join our team as Slaughter Assistants, to start in late April/early May of 2021. An ideal candidate would be eager and able to learn a viable and practical trade in an industry that is integral to the community. Humane animal handling and slaughter practices are a priority at Marfa Meats. Prior experience in slaughter is not required, though a background that includes animal handling, knife skills, hunting and/or related fields is necessary. Candidates should be aware that this position is both physically and emotionally demanding. Precision, care and respect for the animal are the pillars of our philosophy. This role will not be limited to the kill floor and will require team members to wear multiple hats, such as working on the production floor (e.g. meat cutting, packaging, labelling, etc.) and assisting the shipping team, when needed. We are looking for hard working individuals who are willing to learn, take instruction, and grow with our company. 

  • Production Team Members* ($15-19/hr + benefits to start, relevant experience such as meat cutting, 4-H, professional knife skills, hunting,  etc. required)

    • Marfa Meats is seeking individuals to join our team as Production Team Members, to start in late April/early May of 2021. An ideal candidate would be someone with prior meat cutting or packaging experience, or someone who is eager to learn a viable and practical trade in an industry that is integral to the community. Prior experience in meat production is not required, though a background that includes knife skills and/or carcass knowledge will be necessary. Precision, care and respect for the animal are the pillars of our philosophy. Candidates should be focused and attentive to detail and be able to work efficiently without sacrificing quality. Production Team Members will be cross trained in all facets of fabrication in order to create a well rounded team and may be required to assist our shipping team, when needed. We are looking for hardworking individuals who are willing to learn, take instruction and grow with our company.
